Today is noticed brand new bright green growth with fresh white pistils on my last plant that “should” be in its last week of flowering. Is this normal? A sign of stress? None of the others did this.

It can be lightstress but doubt it. Look to healthy, some genetics do that when they are well handled as matter of fact . Sage being best example to proof this point

I find its very common for plants to push out late pistils in last ditch effort to get knocked up but its so close to harvest wont make a difference seed wont have time to develop
